Speaking of Bangalore, it can never be without the mention of Roopa, my x colleague and a very good friend, she is THE database of Bengalooru’s finest restaurants, a very dedicated and passionate foodie that i have ever known! So its not surprising that i had to bug her for a traditional kannada recipe and guess what she has graciously accepted and sent us the recipe for Akki Roti, a karnataka specialty and one of my favourites too! So here we go from Roopa’s kitchen, Akki Roti recipe….

Akki Rotti Recipe

Ingredients
Rice Flour – 2 cups
Onions – 2 medium sized
Green Chillies – 3 to 4
Grated Coconut – 3 tbsp
Cumin Seeds – 1/2 tsp
Oil – 2 to 3 tsp
Drumstick leaves -handful (optional)
Coriander leaves to garnish
Salt to taste

Method
In a bowl, miz all the ingredients with water and make a dough, knead well.
Place a tawa on stove, add little oil and place a handful of dough.
Wet your palm and press the dough well from the centre and spread out.
Continue pressing until the dough spreads out into a circular roti, keep wetting if it sticks.
Make a hole in the centre and add little oil in there and also around the circle.
Turn to roast the other side, repeat with rest of the dough.

You can also add 1/2 a cup poha (aval) to the dough if u like the akkirotti crispier!
