Well yes Brat’s the baker in the house but i do try out something or the other once in a while, i have tried to bake a simple cake 3 or 4 years back in the US and given up 🙂 But i did make a white chocolate cookie successfully yummy once but after that never had a chance (or interest) to try it out once i was back in India. Now that we have a proper conventional oven, i was tempted again, thanks to ‘baking-queen’ Nish‘s encouragement and Brat’s enthusiastic baking spree (and out of pure spite to prove that i am the head chef in the house), i ve tried this apple pudding (still dont dare to try a full fledged cake)!! It came out pretty ok i shud say and am motivated enough to try my hands on baking some more once m back in India! PS: This time i was in such a hyperactive mode that i couldnt get a proper pic, had to make do with this, sorry!

Baked Apple-Mango Pudding Recipe

Ingredients
Apple – 3 to 4 (peeled and cut into bite size pieces)

Mango Pulp – 1 cup

Self-raising flour (all-purpose / maida) – 1 1/2 cups

Milk – 1 cup
Sugar – 1 cup
Unsalted Butter – 2 slabs

Eggs – 2
Baking Powder – less than a tsp
Cinnamon Powder – 1 tsp
Vanilla Essence – 1 tsp

Food Coloring – a drop or two

Method
In a bowl, mix the flour, baking powder and sugar.
Blend in the butter along with the milk and keep stirring.
Break in the eggs and beat well together.
Gently pour the mango pulp, let it thicken, add water if required, bring in the rest of the flavoring/coloring ingredients you are using (vanilla /cinnamon).
Toss in the cut apples and stir until it sticks together well.
Grease a baking dish with butter and bake for 30 to 40 minutes in a pre-heated oven of 220 degrees.

PS: I’ve used mango pulp, you can use ripe mangoes if its in season!
