One more quick healthy and yummy recipe.. the big Okra fry – a staple in the North India cuisine, a semi-gravy that goes awesome along with rotis / chapatis, can also be done as South Indian style Vendaka kari with a few masala ingredient changes as you wish, that can be had with plain rice too!
Bhindi Masala Recipe
Ingredients
Bhindi / Okra / Ladies finger – washed, dried and cut into 3 to 4 pieces each – one cup
Onion – 1 medium sized
Tomato – 1 medium sized
Jeera / Cumin seeds – 1/2 tsp
Turmeric Powder – 1/2 tsp
GGP – 1/2 tsp
Dhania / Coriander Powder – 1 tsp
Red Chilli Powder – 1 tsp
Garam Masala Powder – 1 tsp
Salt and pepper to taste
Oil to saute
Method
Microwave the ladies finger for at least 10 minutes, if you prefer not to, then let it cook in low flame on the stove for ten minutes with very little oil, but make sure you keep stirring.
In a pan, add oil, saute the finely chopped onions until golden brown.
Now bring in all the masala ingredients along with the Bhindi and bring to medium flame when half cooked.
Add the diced tomato to the Bhindi, make sure to not let it become too gravy.
Let it cook in its own juices and toss well in the end on high flame to remove any excess moisture.
Always add the Garam masala and Black pepper towards the end to retain its taste!
