The blog has been all Indiany lately, just like my cooking at home as become lately. But here’s one Sunday breakfast / weekend brunch special we do almost every other weekend without fail – pancakes hashbrowns and eggs, if lucky with maple syrup! yumm yumm! both of us love it! Hashbrowns as you can predict is Brat’s specialty, so i take over the pancake dept and initially had a bit of trouble getting them perfectly. Practice definitely perfects, they come out awesome now! Take a bit of discipline in ordering the ingredients and patience – a lil hard work fluffing the mix 🙂

Classic Pancake Recipe

Ingredients
All purpose flour / maida – 1 cup
Milk – 3/4 of a cup 
Butter – 1 slab (4 tbsp) 
Sugar – 2 tbsp
Egg – 1 large 
Baking powder – 1/2 tsp (optional) 
Salt to taste

Method
Mix the flour with sugar and salt (baking powder if adding), toss well.
Make a well in the middle and add melted butter and egg
Keep mixing and stirring fast while bringing in the milk slowly
Beat well and mix until it forms a smooth batter 
On a dosa tawa, grease a little oil, pour the batter in circles and let it cook on medium flame
Turn it around in few minutes and cook well on both sides
Watch the pancake fluff up and remove from heat


Serve hot with yummy maple syrup or a side of your choice!
