I love Cauliflower and anything and everything made with it..wanted to try something new with cauliflower and suddenly it striked me to make a soup outa it, and guess what, it came out awesome and brat who hates cauliflower actually loved this one! Its a pretty simple recipe inspired by many cream of cauliflower soups i found online with a twist of my own too.. check it out!
Cream of Cauliflower Soup Recipe
Ingredients
Cauliflower – broken into florets
Potatoes – 1 medium sized or 2 small potatoes
Onion – 1 small sized
Garlic – 1 or 2 cloves
Milk – 1/2 cup
Fresh Cream – 2 to 3 tbsp
Cheese – 1 to 2 tbsp
Pepper kernels – 4 to 5
Black Pepper – 1/2 tsp
Vinegar – 1/4 tsp
Butter – 1 tsp
Salt to taste
Method
Boil the cauliflower and potatoes with a little salt.
Saute the onions, garlic and peper kernels in butter, grind along with the boiled vegetables.
Add the cheese while grinding half way.
Bring to a smooth paste and pour into a pan.
Stir in the milk and fresh cream, bring to a boil.
Add salt and pepper, mix and stir well.
Serve hot with Garlic Bread!
