I am kinda in a happy mood today and this (sometimes i call it Navaratan / Navratna Pulao) is what i make on such days! Me not being such a ‘sweet’ person, except for those days when i do crave sweets all of a sudden or in a mood to celebrate (if not anything then my shocking good mood for the day) then this easy to make and unique pulao comes to my rescue. Its a good idea to pack lunch too. And also to surprise your guests with something new, but dont risk it unless you are pretty sure they would like a semi-sweet dish for main course!

Dry Fruits and Nuts Pulao Recipe

Ingredients

Basmati / Long Grain Rice- 1 cup
Tutty Fruity – 3/4 to 1 cup
Artificial Cherries (cut in halves) – 1/2 cup (optional)
Raisins – handful 
Cashews / Badam / Pista / nuts of your choice – 3/4 to 1 cup mixed
Ghee – 2 tsp
Butter – 2 tbsp
Coconut Milk / Plain Milk –  1 cup
Water – 1 cup
Elatchi / Cardamom Powder – 1 pinch
Food Color – 1 pinch (optional)
Ginger Garlic Paste – 1/2 tsp
Bay leaf / Cinnamon / Cloves / etc. – for the masala
Salt and sugar to taste

 
Method
Saute the masala items in the butter, add the basmati rice, fry.
Add GGP, coconut milk / milk whichever you are using and stir.
Let it cook in low flame, add the sugar, elatchi, food color and salt.
Mix well, transfer to a rice cooker and let it cook.
In a frying pan, fry all the nuts in ghee and keep aside.
Now repeat with the raisins. 
Once the rice is cooked, mix in all the dry fruits and nuts.
Mix well and serve! 

This is a really healthy but yummy rice that attracts kids easily!
