Here’s another best one of mine…and my favorite to make as well as eat… this is my own recipe from scratch…as i wudve mentioned more than once before.. i wud die for anything made with eggs and whichever way it is done..and this is the best Indian way to make eggs.. egg burji..makes an excellent side dish as well as goes alone with plain steamed or fried rice too… here we go… egg burji recipe…

Egg Burji Recipe

Eggs – 3 or 4
Green chillies – 1 to 2
Onion – 1 medium sized
Tomato – 1 medium sized
Tumeric powder – 1/4 tsp
Red chilli powder – 1/4 tsp
Garam masala – 1/4 tsp (optional)
Ground black pepper – 1 tsp
Oil to saute
Salt to taste

Saute fine-chopped onions until golden brown.
Add green chillies and fine-chopped tomato.
Add all the powders except pepper and fry.
Now break the eggs and pour into the mixture.
Keep stirring fast, so the eggs break properly.
Add salt and 1/2 tsp pepper.
Mix really well until the burji is dry.
Sprinkle another 1/2 tsp pepper and serve hot.
