Ok here’s a quick one.. healthy and tasty.. and really easy to make.. carrot salad.. the indian way..u can make this anytime u want a snack but don wanna munch on those potato chips.. makin it with ingredients almost always readily available in any indian kitchen.. cant call this a recipe per se .. but yea there is a possible way of screwing this up too.. so here’s the right recipe for making an indian carrot salad in a yummy way…
Carrot Salad Recipe (Indian)
Ingredients
Carrot – 2 or 3 – shredded well
Lemon juice – few drops
Mustard seeds – 1/4 tsp
Jeera (cumin seeds) – 1/4 tsp
Turmeric powder – 1/4 tsp
Raisins/sugar/walnuts/honey- optional
curd/green chilly/asafoetida/coriander/curry leaves – optional
Oil to saute
Salt to taste
Method
In a pan, add oil and splutter the mustard.
Saute jeera and turmeric powder (green chilly, curry leaves and asafoetida if using)
Now mix in the shredded carrots and saute well.
Sprinkle salt and sugar if using and turn off flame.
Squeeze lemon juice over and toss.
The salad can be mixed with curd, garnished with coriander and served or mixed in honey and garnished with raisins/nuts and served.
Use olive oil for a more healthy salad. You can also sprinkle pepper if you are adventurous!
