Yay! After a long time here’s a guest post by my bestest friend ever Nits (Nithya Sriram)! Here’s a healthy yet mouth-waterin recipe to even look at! Carrot is one thing that we all need to include in our diet in one way or the other, and the best part is it can be cooked a million ways in every possible cuisine! This Carrot Pickle is a very innovative n instant/easy to cook pickle and what i would like to term ‘smart food’, thanks to Nits, lets check it out..Carrot Pickle from Nits’ Kitchen…

Instant Carrot Pickle Recipe

Carrots – 3 or 4 – peeled and washed
Methi (Fenugreek Seeds) – 1/4 tsp
Red Chilli Powder – 1/2 tsp
Mustard Seeds – 1/4 tsp
Asafoetida (hing) – 1 pinch
Turmeric Powder – 1/2 tsp
Lemon – 1/2 or 1/4 to sqeeze
Salt to taste
Oil to saute

Cut carrot into long thin sticks.
Roast the Methi and grind coarsely
Heat oil in kadai, add mustard , fenugeek powder, asafoetida, turmeric and red chilly powder.
Pour it over the carrots, mix well
Add lil salt and lemon juice.
