Dont be confused, this is a basic recipe to make instant vegetable rice at home. I have used tried it with Raw Mango, Peas and Potato, you can use any vegetable separately or together. This is a very quick and yummy rice recipe i use often at home, made in rice cooker to make things easier…

Mango Rice / Peas Rice / Potato Rice Recipe


Ingredi
ents
Rice – 1 cup
The vegetable you are going to use – Raw Mango (shredded) or Green Peas (cooked previously) or Potato (diced into small bits and fried well or microwaved)
Mustard Seeds – 1/4 tsp
Onion – 1 large sized
Turmeric Powder – 1.2 tsp
Jeera – 1 tsp
Cinnamon/Cloves – one or two
Ginger-garlic Paste – 1/2 tsp
Green Chillies – 2 – slit in the middle
Channa Masala/ Garam Masala powder – 1 tsp
Ghee – 2 tbsp
Salt to taste
Oil to Saute

Method
In a pan, add oil, splutter mustard, add the masala stuff, green chillies, jeera, turmeric and saute.
Add the onion and ggp, fry until golden brown. Add ghee for frying and some salt for the onion.
Add the shredded raw mango and mix unil raw smell is gone.
In case of using potato, fry well with a little more oil.
In case of peas, fry a little and add oil to cook a little.
Now add the garam or channa masala and cook until raw smell fades off.
Mix in cooked rice and add more salt, mix well and serve hot.

This is even quicker to cook if you can add raw rice to the mixture, put everything together in a rice cooker with water!
You may add milk (or even coconut milk) if ur using peas or other veggies.
You can even just use more jeera and make it simpel jeera rice, in that case use more ghee!
You can use curry/coriander leaves according to taste.
