Its been two days i revamped the blog and how can i not post one of Brat’s recipe yet! This is a simple and yummy potato recipe from the family’s very own king of potato-making. A partially Italian recipe learnt while in the UK though the Italian herbs have been compromised for due to lack of availability at the moment and to suit our palate. Baby potatoes are a pain in the you-know-what while cooking, too small to peel, but the yummiest of all potatoes and tough to miss, this oven roasted baby potatoes recipe makes that part easier too. So here we go… Oven-roasted Baby-potatoes recipe from Brat’s kitchen…..

Oven-roasted Baby-potatoes Recipe

Ingredients
Baby potatoes – 10 to 15 – washed – not peeled!
Olive oil – to sprinkle over for roasting
Freshly ground pepper – 1/2 to 1 tsp
Rosemary / sage (optional)

Garlic powder (optional)
Salt for taste

Method 
Preheat oven at 400 degrees F for about 10 minutes.
Sprinkle olive oil, salt and pepper, garlic powder if using, over the baby potatoes. 
Toss and mix well in a bowl until all the potatoes are equally coated. 

Place on a greased baking tray and let it roast for around 30 minutes.
Once a knife inserted comes out clean, take the baby potatoes out.
Serve hot as a starter or along with Pasta!

You may add rosemary or sage to to the olive oil and let it coat to make it more authentic!
