I have been MIA this time with a valid reason tho 🙂 with weird cravings and weirder aversions, the last two months have been a surprise to myself on how much i can hate food, well even the pics or the thought of it sometimes! I know its hard to believe for a foodie like me 😀 Now that am kinda ok with it and gettin back my taste again, or so i think, my amma has made me the first set of yummy food list i have given her. I have tried making this one earlier and couldn’t get it as perfectly. Although, the sugar-dipped diamond cuts version is awesome too, this savory diamond cut biscuits / chips tops it all. How she does it… here is the recipe…

Ingredients
Maida / All-purpose Flour – 1 cup
Atta / Wheat Flour – 1/2 cup
Jeera / Cumin Seeds – 1/2 tsp
Red Chilli Powder – 1 tsp
Butter – 1 tbsp 
Water to prepare dough
Oil to deep fry
Salt to taste
 

Method 
In a large bowl, mix together the flours with all other ingredients (except the oil) and make a dough.
Knead well, keep aside for sometime.
Make lemon-sized balls out of the dough and roll into rotis.
Cut the roti into squares of equal measure.
Heat oil in a tawa and slowly dip in each of the squares.
Keep the flame on high and watch the chips rise to surface.
Bring to medium flame, let it cook on both sides until golden brown.
Once crisp, remove the diamond chips from the oil, directly on to a paper towel, to absorb the excess oil.
Let it cool and store in an airtight container.

You can make the diamond cuts with just maida, or stick to an all atta healthier version too.
