Semiya Kichadi Recipe

Semiya (vermicilli) – 1 cup
Onion – 1 medium sized
Tomato – 1 (optional)
Veggies – 1 carrot, 1 potato and 3 to 4 green beans – cut in a similiar fashion
Peas – 1/2 handful
Green chillies – 1 or 2 slit in the middle (According to spice requirement)
Mustard seeds – 1/2 tsp
Channa dal – 1/2 tsp
Urud dal – 1/2 tsp
Curry leaves – a few
Oil to saute

Dry roast the Semiya (Vermicilli) and keep aside.
In a kadai, take a few tsps of oil and let the mustard seeds splutter.
Add curry leaves, the dals and fry till light brown.
Saute the onions and green chillies.
Dice the vegetables and stir them into the kadai.
Now add around 2 to 3 cups of water and salt, let the veggies cook for few mins.
Slowly bring in the roasted Semiya into the boiling water.
Stir continuously making sure lumps are not formed, add a little more salt.
Add water if required, cook until the Semiya is soft and well-cooked.

You may substitute Rava for Semiya to make Rava Kichadi like i mentioned above!
