So i decided to keep it simple after that huge recipe last time.. simple home-made tomato rice!
Tomato Rice Recipe
Ingredients
Rice – 1 large cup (cooked)
Tomatoes – 3 medium sized
Onion – 1 large sized
Cinnamon/cloves/garlic/bay leaves – few of each
Mustard Seeds – 1/4 tsp
Urud dal – 1/4 tsp
Channa dal – 1/4 tsp
Green chillies – 2 small sized – slit in the middle
Jeera (Cumin Seeds) – 1/2 tsp
Freshly ground pepper – 1/2 tsp (optional)
Turmeric powder – 1/4 tsp
Red Chilli Powder – 1/2 tsp
Garam masala powder – 1/4 tsp
Salt to taste
Oil to saute
Method
Splutter the mustards in few spoons of oil, add turmeric powder and the dals, let it fry.
Now add the masalas, jeera, garlic, green chillies and onion and fry until golden brown.
Dice the tomatoes and add to the onions.
Add very little water, since tomatoes will water anyway, add salt and the other powders.
Let it cook until raw smell fades off.
Mix in the rice and serve with pappadams!
I just realized this is a good mix of north and south indian ingredients, proper Indian dish!
