Yay! Its Karthigai and i finally made Uppappam from scratch and it came out awesome! i am really excited now and wanna share the recipe with u right away 🙂

Uppappam (Uppu Appam) Recipe

Raw Rice – 2 cups
Channa Dal – 2 tbsp
Urud Dal – 2 tbsp
Moong Dal – 2 tbsp
Green chillies – 4 to 5
Asafoetida – 1 pinch
Salt to taste
Oil to deep fry

For Seasoning
Mustard Seeds – 1/2 tsp
Red chillies – 1 or 2
Channa Dal – 1 tsp
Urud Dal – 1 tsp
Finely chopped coriander and curry leaves – very few (optional)
Coconut – cut into very small pieces (handful)

Soak the rice and dals in water for few hours.
Grind the soaked mixture with green chillies and salt into a smooth batter (like that for idli)
Keep the batter overnight, let it ferment.
Fry the seasonings and add to the batter.
Fill the Appam pan with oil (upto half the level in each one) and add the batter slowly with a tablespoon in each one of them.
The Appams slowly rise up when done and you can turn the side and fry again.

You can add idli batter and cooked rice while grinding for extra crisp.
You may also instantly do this with rice flour and maida, add a little curd for the sourness.
