I am back again in the blogosphere… back yet again.. but this time am planning to complete my drafts of years 😛 before i might have to go MIA for good 🙂 I been wanting to post this recipe for long now.. one of my innovations and one of the very few of them i am proud of cos it won over the toughest pickiest foodie of all times..my hubby dearest. What started simply as a lunch box quick fix for a schezuan fried rice, with a little bit of changes here and there to suit our tastebuds, has become a favorite at home by all and slowly starting to get nutritional too with more vegetables being added with each time i make it.. When i started making it as Chinese Cabbage Rice for Brat’s lunch..it was the quickest one i could make in the mornings which he almost always finished completely.. now adding carrot potatoes and maybe capsicum / peas to it has brought about a complete Hot and Sweet Vegetable Rice made at the quickest time possible…whats in a name anyway!! n yes there is also a noodles version if you like it that way 🙂

Vegetable Schezwan Fried Rice / Hot and Sweet Noodles Recipe

Ingredients 

Long grained rice – 1 cup
Onion – 1 medium
Cabbage – as much as you want – shredded
Carrot – medium sized one – peeled and cut into rectangles
Capsicum – ditto
Potato – ditto
Soy sauce – 1 tbsp (optional)
Red chilli sauce / sweet chilli sauce – 1 1/2 tbsp
Green Chilli Sauce – 1/2 tsp
Tomato Ketchup – 1 to 2 tbsp 
GGP – 1/2 tsp
Olive Oil and Vinegar to saute
Salt, sugar and pepper to taste

Method 
Heat oil and vinegar in a pan and saute the onions and capsicum well.
Add the cabbage and fry well along with the sauces and ggp.
Add the other cut vegetables for few mins and fry.
Bring in ketchup, salt, sugar and freshly ground black pepper.

For the fried rice:
Add the long grained rice and some more oil if required and fry again.
Mix in 2 to 2 1/2 cups of water and let it cook in a rice cooker.

For the noodles:
Add water and let the vegetables come to a boil.
Boil and drain the noodles separately before mixing them with the vegetables mixture.
Toss of high heat and serve hot!

If you are looking at making authentic Schezwan Fried Rice / Noodles then you have to go with the red chilli sauce and forget the ketchup options.. but its a lot more yummy and fun this way!
