Long time! Life without internet was not as bad as i thought it wud b, its definitely much better than life with slow internet! So back again with a good connection. somebody asked me if i have Kurma recipe on my blog and i realised i need to post it rite away! So here comes Vegetable Stew as in Kerala style Kurma with Thenga Pal (Coconut Milk Korma), something i ve loved as a kid and wondered how different it is from the usual Kurma. Like any other Kerala based dish. my mom makes this one the best too..here we go.. Veg Kurma Recipe from my mom’s kitchen…
Vegetable Stew / Thenga Pal Kurma Recipe
Ingredients
Vegetables – Potato, Cauliflower, Beans, Peas, Carrot – washed and diced
Coconut – grated – 1 cup
Onion – 1 medium sized
Green Chillies – 3 to 4 – slit in the middle
Ginger – 1 small piece
Garlic – 3 to 4 cloves
Cinnamon/Cloves/Pepper/Cardamom/Bayleaf – few
Sat to taste
Oil to saute
Method
Grind the coconut along with ginger and take the milk out. You can retain some coconut too.
Saute the green chillies, spices, garlic and onions in a kadai, you can use coconut oil if you like it.
Boil veggies separately and add them to the kadai.
Add the ground coconut paste and some water, cook well.
Serve hot with Appam or Idiappam
You can add one green chilli and little garlic to the coconut while grinding too, brings in more flavor when added in two forms (directly and ground)
